Chapter 1 — Tools, Technique, and The Importance of Air
IN THIS LESSON
Airing the Wines: Let Them Breathe
Before diving into your Tuscan lineup, it’s essential to let the wines open up. Oxygen softens tannins and unlocks aromatics—especially important for structured reds like Vino Nobile, Bolgheri, and Super Tuscans.
How to Air the Wines:
Decanting: Pour the wine gently into a clean decanter 30–60 minutes before tasting. This is ideal for younger, more robust reds.
Bottle Open + Rest: If a decanter isn’t available, open the bottles and let them sit uncorked for at least 20–30 minutes.
Swirl in Glass: Each pour should be gently swirled in the glass—this allows more immediate airing and activates aromatic compounds.
